Hearty Cajun Chili

2.5 lbs Ground Bison

12 oz Smoked Chicken Sausage, quartered and chopped

2 – 14.5oz Cans of Diced Tomatoes, no salt added

1 – 14.5oz Can of Tomato Sauce, no salt added

2 c Zucchini, raw, quartered and chopped

1 c Red Bell Pepper, chopped

1/4 c Onion, chopped

2 TBSP Purely Cajun Seasoning

1 1/2 TBSP Chili Powder

1/2 tsp Cumin

1 packet of Stevia

2-3 C of water

Brown ground meat in large pot over medium-high heat. When it is almost done, add quartered sausage and finish browning. Add water to prevent sticking. Add onions, bell peppers, and spices cook 5 minutes. Add zucchini, cook 10 minutes. Add tomatoes, tomato sauce and Stevia. Add about 2 c water. Reduce fire to medium-low and simmer for about 20 minutes, stirring occasionally. If there is too much water, cook it down longer.

Makes 7 Servings. Per Serving: 1 Leanest Protein, 3 Vegetables, 3 Condiments (Add 2 Healthy Fats)

Bison is the Leanest protein, which offers the addition of 2 healthy fats. Enjoy 2 servings from the following:

2TBSP Sour Cream = 1 Healthy Fat Serving

2 TBSP Avocado – 1 Healthy Fat Serving

MODIFICATION:

Modification 1: If you choose to have ground beef, dark turkey or chicken, change the ground bison from 2.5lbs to 2.25lbs and since this falls into the lean option, do not add any healthy fats.

Modification 2: If you do not use the smoked chicken sausage, change the ground meat to 3lbs total. Since this falls into the lean option, do not add any healthy fats.
