4c cauliflower, frozen
4oz low fat cream cheese
¼c low fat sour cream
1/4c minced green onions
1/4c freshly grated Parmesan cheese
6 slices Applegate turkey bacon, cooked and crumbled
1 ½ c favorite 2% shredded cheese
Purely Cajun to taste
Preheat oven to 350F. Boil cauliflower til tender. Drain well and mash, leaving some chunks. Mix in cream cheese, sour cream, ¾ of green onion, Parmesan, and ¾ of crumbled bacon. Spread evenly in a medium-sized glass casserole dish. Sprinkle with shredded cheese and reserved green onions and bacon. Bake 30-35 minutes, or until hot and bubbly. Enjoy!!
