Crawfish Etouffee

16 oz crawfish tails

2 wedges garlic and herb Laughing Cow cheese

1 tbsp butter

2 tbsp chopped onions

1 clove garlic, minced

½ cup celery

1 cup red bell pepper

2 tsp tomato paste

About 1 cup of water

Purely Cajun to taste

1 ½ cup oven roasted zucchini (recipe below)

Sautee onions, garlic, celery & bell peppers in butter til very soft, adding water as necessary. Add laughing cow cheese and tomato paste, cook until well blended, adding water as necessary to make a gravy. Add crawfish and Purely Cajun to taste. Cook for about 10 more minutes. Add water if necessary to make more gravy, make sure not to add too much as it will be watery.


Oven Roasted Zucchini


Oil of Choice

Purely Cajun to taste

Preheat oven to 425°. Chop raw zucchini in quarters and place on baking sheet lined with parchment paper. Drizzle oil and Purely Cajun. Roast in oven, stirring every 10 minutes til turning brown. About 30-45 minutes.

Serve etouffee over roasted zucchini, Enjoy!!
