Portobello Mushroom Pizzas

 

2 large portobello mushroom caps, stem removed (6oz)

1/8c spinach

2TBSP red bell pepper

2TBSP spaghetti sauce

¾c part-skim mozzarella cheese

2oz cooked ground meat

¼tsp Italian Seasoning Blend

¼tsp Purely Cajun Seasoning

Preheat the oven to 375. Place the mushrooms face down on a baking sheet, and bake for 10 minutes. Brown ground meat with italian seasoning blend and Purely Cajun. Remove mushrooms from the oven & dab with paper towel. Spread spaghetti sauce in the cup of the cap. Top with meat, bell pepper, spinach then cheese. Bake for an additional 20 minutes, or until cheese is melted and golden.

Makes 1 serving. Per Serving: 1 lean protein, 3 greens, 3 condiments
