Cabbage Casserole

4lbs ground chicken thighs

14 cups cabbage, shredded

3/4 cup onion, chopped very fine

1 tbsp low sodium tamari or soy sauce or coconut aminos

1 – 8 ounce no salt added organic diced tomatoes, pureed further

3 TBSP Purely Cajun Seasoning

Mix all above ingredients raw in a large bowl. Place in a deep, rectangle baking dish . Place in oven at 350 for an hour. Remove from oven and cut  into 10 servings then place back in the oven for the juices to seep back in another 30 to 45 minutes, til the top begins to brown. Serve & Enjoy!

Makes 10 servings, Per serving: 1 Lean protein, 3 vegetables, 3 condiments
