20oz raw shrimp
1 wedge light laughing cow garlic and herb cheese
1 tsp cilantro
1 tsp Purely Cajun
6.64oz romaine lettuce
½ avocado
Pico de gallo:
1 cup diced tomato
2 TBSP finely chopped cilantro
2 TBSP diced purple onion
1 tsp fresh lemon juice
¼ tsp Purely Cajun
Mix all Pico de gallo ingredients together and set aside.
Place shrimp in nonstick skillet over Medium High heat, add Purely Cajun and cilantro, cook for 5 minutes. Add cheese and stir until melted and turn off heat. Total cook time about 10 minutes or until pink. Do not overcook as they will be rubbery.
Place shrimp in lettuce, top with pico de gallo and avocado. Enjoy!
