Cauliflower Nachos

20 oz raw ground bison

5 c raw cauliflower, chopped

2 c sliced raw bell pepper, choose your favorite color

2 tsp olive oil

1/2 tsp cumin

1/4 tsp chili powder

2 tsp Purely Cajun Seasoning

1 c low fat Pepper-Jack or low fat mozzarella, shredded

3 TBSP Salsa, will use 1 TBSP per individual serving

3 TBSP Guacamole, will use 1 TBSP per individual serving

3 TBSP Sour Cream, will use 1 TBSP per individual serving

DIRECTIONS

Preheat oven to 425 degrees F.

Brown ground bison in a pot on medium high heat, seasoning with Purely Cajun to taste.

Line a large baking sheet with parchment paper and add chopped cauliflower and bell peppers. Drizzle with olive oil. Season with Purely Cajun, cumin, and chili powder. Toss to coat. Roast for 35-40 minutes until golden and crispy.

Plate the roasted cauliflower/bell pepper mixture, top with ground meat, then pepper jack cheese, then salsa, guacamole and sour cream.

Makes 3 servings. Per serving: 1 protein, 3 vegetables, 3 condiments, 2 healthy fats
