29 ounces raw chicken breast or 20 oz. cooked
1 1/3c salsa verde
2.5c part-skim mozzarella cheese, grated
2.5c low fat Mexican cheese blend
3/4c low fat greek yogurt
15oz. 2% cottage cheese
10 oz. can fire roasted green chilies
1 large yellow bell peppers, chopped
4c raw spinach chopped
½tsp cumin
½tsp chili powder
Directions
Preheat oven to 375º F. Cook chicken in pan all the way through then shred. Stir chicken, bell peppers, chilies, 1c salsa verde, yogurt, Purely Cajun, cumin, & chili powder in a large bowl. Spread ½ chicken mixture on bottom of large baking dish. Top with half of each: cottage cheese, mozzarella and mexican cheese. Put remaining chicken mixture, salsa verde, cottage cheese and other cheeses. Bake for 45 minutes. Let it cool, cut into servings, Enjoy!
