Bell Pepper Nachos

2 bell peppers, any color

9 oz ground turkey

4 oz moderate fat mexican or mozzerella cheese

2 tsp taco seasoning

1 tsp Purely Cajun Seasoning

1/2 c tomato, diced

2 tsp green onions, chopped

10 olives, sliced

Brown meat, add taco seasoning and Purely Cajun. Add a little water to make sure it is a little juicy. Set aside. Cut bell pepper into chip size pieces. Place peppers on a baking pan lined with parchment pepper then top with: meat mixture, cheese, then green onions. Bake at 350 for 13 minutes. Top with tomatoes and olives. Serve and Enjoy!

Makes 2 Servings.Per Serving: 1 lean, 3 vegetables, 1 fat, 3 condiments
