Beef Stroganoff

 

2lbs beef, cut into small cubes or strips

¼ c onion, chopped

1 TBSP fresh rosemary, chopped

8oz mushrooms, sliced

1 c fat free Greek yogurt

6 TBSP low fat sour cream

8 zucchini (2 1/3 pounds)

4 tsp Purely Cajun Seasoning

 

Season meat with Purely Cajun & Rosemary. Cook in large pan until browned. Remove from pan & set aside. Add onions and sauté for about 5 minutes then add mushrooms and cook until mushrooms are tender, adding water to prevent sticking. Add meat back to the pan & stir together, again adding water to prevent sticking. Cook for about 5 minutes. Add sour cream & yogurt. Turn off heat and stir well.

Using a vegetable peeler, make zucchini ribbons. Spray a pan with non-stick spray and stir fry zucchini for about 10 minutes or until desired texture. Serve stroganoff over zucchini ribbons Enjoy!
