Jalapeno Shrimp Cakes

2 ½ lbs raw shrimp

¼ c jalapeno, finely chopped

1 garlic clove, minced

¼ c green onions, chopped

2 TBSP cilantro, finely chopped

1 ½ TBSP Purely Cajun Seasoning

5 ½ c arugula

4 tsp fresh lime juice

4 tsp olive oil for salad

½ small avocado, thin sliced

Pat shrimp dry with paper towel to remove all excess water. Chop in food processor, blend until it forms a paste.

Place in large mixing bowl. Add jalapeño, garlic, green onions, cilantro and Purely Cajun, mix well.

Make each patty at a heaping ½ cup, makes 8.

Heat a non-stick skillet over medium heat and spray with non-stick spray. Cook on each side for 4-5 minutes or grill.

Serve on a bed of arugula drizzled with lime juice, oil and avocado. Add more Purely Cajun if desired.
