Shrimp Scampi Zoodles

2 1/3 pounds zucchini

1 tbsp unsalted butter

2 tbsp extra virgin olive oil

4 minced garlic cloves, minced

2 ½ pounds large peeled and deveined shrimp

1 tsp Purely Cajun Seasoning (All Purpose Blend)

1 tbsp chopped fresh parsley leaves

1 tsp fresh grated lemon zest

3 tbsp fresh squeezed lemon juice

 

Directions:
Use a vegetable spiralizer to cut the zucchini into noodles. In a large nonstick pan, melt butter and olive oil over medium heat. Add garlic and sautee for 1 minute. Add shrimp and Purely Cajun Seasoning. Sautee until shrimp turn pink, about 5 minutes, stirring often. Remove from the pot and set aside. Add zucchini noodles, lemon zest, lemon juice, and parsley then cook 5 minutes, stirring well. Add shrimp and juices back to the pot and toss well to combine and serve immediately. Enjoy!
