Healthy Eggplant Pizzas

Yield: 2 servings (Per serving:½ Lean protein serving, 1 fat, 3 vegetable).

7 ounces raw eggplant

2 teaspoons olive oil

½ cup Hunt’s low carb tomato sauce

4 ounces part-skim mozzarella cheese

Cut Eggplant into rounds and brush with olive oil and roast for 15-20 minutes. Remove and top with sauce and cheese on it and bake at 350 till cheese is melted.
