7.5 oz hearts of palm, chopped
1c cherry tomatoes sliced in half
1/4c yellow bell pepper, chopped
1/2c spinach, chopped
1TBSP purple onion, chopped
4TBSP low fat feta cheese
10 kalamata olives, sliced in half
1tsp lemon juice
1tsp red wine vinegar
¼ tsp oregano
¼ tsp Purely Cajun Seasoning
Toss all ingredients together, separate into 2 servings & serve! Enjoy!!

***To make this a complete meal, add 7 oz of cooked shrimp, 6 oz cooked chicken breast or 6 oz part skim mozzarella chunks.
