Cheese Stuffed Jalapeno Peppers

 

2 light laughing cow cream cheese

1/4 cup 2% reduced fat Mexican Three Cheese Blend

4 Jalapenos

1 tbsp grated Parmesan

1/4tsp Purely Cajun Seasoning

Parchment Paper

Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes, boil longer for milder flavor. Rinse in cold water, set aside.

Mix laughing cow cream cheese, Mexican cheese, & Purely Cajun in a bowl. Place 2 tsp inĀ each jalapeno half; sprinkle with grated Parmesan cheese. Place baking sheet lined with parchment paper. Bake at 400 for 5-10 minutes or until cheese is melted. Serve and Enjoy!
